Pumpkin seed pesto

  • ½ cup unsalted pumpkin seeds
  • 2 cups fresh arugula
  • 2 cloves garlic
  • ½ cup parmesan cheese
  • ½ cup olive oil
  • Pinch of salt


Combine all ingredients in a blender or food processor. Pulse until a coarse paste forms and then season with salt. Cover and chill until ready to use.
