Zucchini and Onions

Fast and fabulous, this is your no-excuse zucchini side dish! Not hiding behind any sauces or cheese, this simple-to-do dish with ingredients you likely have on hand (onions, garlic, salt and pepper) provides a perfect side to almost any main meal. Naturally low in calories but full of vitamins and minerals, you and your family will be squealing for squash!

Ingredients

  • 1 medium zucchini, chopped
  • ½ spring onion, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, coarsely chopped
  • Salt and pepper, to taste 

Instructions

Heat 2 tablespoons of olive oil in a large skillet over medium heat.Sauté onion and garlic until fragrant

Add zucchini, cook until tender. Season with salt and pepper to taste.
