Strawberry, blueberry and peach fruit salad with mint.

Summertime is the perfect time to make a refreshing fruit salad. Using fresh, in-season ingredients is a great way to make the most of each season. The ingredients in this salad are in season throughout the summer.

This recipe features strawberries, blueberries, peaches and mint. Strawberries are in season late May to early June, blueberries early July to mid-August and peaches are in season July, August and September. So, depending on when you make this, a different fruit will shine!

Ingredients:

  • 1 pound strawberries, hulled and thinly sliced
  • 3 medium peaches, thinly sliced (optional: peel first)
  • 6 oz (1 cup) blueberries
  • 1 heaping tablespoon fresh, chopped basil or mint
  • 2 tablespoons lemon juice (about 1 medium lemon)
  • 1 tablespoon maple syrup or honey
  • 2 teaspoons balsamic vinegar

Instructions:

  1. In a medium bowl, combine the strawberries, peaches, blueberries and basil. Drizzle the lemon juice, maple syrup and balsamic vinegar on top. Gently toss to combine.
  2. Serve immediately, or chill for later. Keeps well for about 2 days in the refrigerator.
  3. Makes 6 servings.
