Quinoa with pistachios, pomegranate and kale

Ingredients

  • 1 cup quinoa
  • 1 shallot, minced
  • 1 cup pomegranate seeds
  • ½ cup pistachios
  • 2 cups curly kale, chopped
  • ½ orange, juiced
  • 1 tsp orange zest
  • 1 tbsp red wine vinegar
  • 1 tablespoons olive oil
  • Salt and pepper

Instructions

Cook the quinoa per package instructions. Cool.

In a medium sized bowl, combine the remaining ingredients with the quinoa. Serve.
