Ingredients

  • 2 cups white whole-wheat flour
  • ½ cup fine cornmeal
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup packed light brown sugar
  • 2 cups low-fat or nonfat buttermilk
  • 1 tablespoon extra-virgin olive oil or canola oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 200 degrees. Place large baking sheet on the center of the oven rack.
  2. Whisk whole-wheat flour, cornmeal, baking powder, baking soda and salt in a large bowl.
  3. Lightly beat eggs and brown sugar in a medium bowl. Add buttermilk, oil and vanilla. Whisk until blended.
  4. Add the wet ingredients to the dry ingredients, stirring until combined.
  5. Preheat a waffle iron, and lightly coat with cooking spray. Add enough batter (about ⅔ cup) to cover ⅔ of the baking surface and distribute evenly with a spatula.
  6. Close and cook until golden, brown, about four to five minutes. Transfer waffles to the baking sheet to keep warm.
