Number of servings: 4
16 ounces of 93 percent lean ground turkey
½ teaspoon of cumin
1 teaspoon of dried parsley
1 teaspoon of dried oregano
½ teaspoon of onion powder
1 cup of plain low-fat or nonfat yogurt
½ cup of cucumber, peeled and finely chopped
1 clove of garlic, minced
1 ounce of lemon juice
2 tablespoons of fresh parsley, chopped
- In medium mixing bowl, mix turkey, cumin, dried parsley, oregano and onion powder. Combine thoroughly and shape into eight patties, approximately ¼ inch thick each.
- In separate bowl, combine yogurt, cucumber, garlic, lemon juice and fresh parsley. Mix thoroughly and refrigerate until ready to use. This will be your 'Greek sauce.'
- Spray a large skillet with nonstick cooking spray and heat over medium high heat. Cook turkey patties until browned and cooked through, turning once.
- Serve each patty in half a pita with lettuce, tomato, cucumber and two tablespoons of Greek sauce.
