Sweet potato dip

  • 2 cups baked sweet potato
  • ⅓ to ½ cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • sprinkle of salt


Preheat oven to 400°F.

Prick sweet potatoes with a fork, place on a baking sheet and bake for 1½ hours, until potatoes are soft. Remove from oven, cool and then scoop out the soft potato, leaving the skin behind. Blend ingredients in a food processor or mash well with a fork. Use fresh fall apples or crackers to dip.

Stores well in the refrigerator for three to four days.
