Chop in a food processor:
- 2 cloves garlic
- 1-inch cube fresh ginger root, peeled
Add and process until smooth:
- 1/4 cup boiling water
- 1/2 teaspoon ground coriander
- 2 tablespoons soy sauce
- 1/2 teaspoon vinegar or lemon juice
- 2 tablespoons peanut butter
- 1/8 teaspoon cayenne
- 2 teaspoons honey
- 1 (16 ounce) block extra firm tofu
Slice tofu into four, 4-ounce blocks, and place in a shallow baking dish. Pour peanut sauce over tofu and marinate for at least 30 minutes. Turn over at least once. Place baking dish with tofu and peanut sauce under broiler and broil until browned on both sides.
